Mac + Cheese Recipe 


  • 400g macaroni pasta, cooked al dente 
  • 50g plain flour 
  • 50g vegan butter 
  • 500ml vegan milk (oat is creamiest) 
  • 100g vegan cheese (try find a sharp cheddar) 
  • 50g nutritional yeast 
  • 1tsp mustard 
  • 1tsp hot sauce 
  • 1tsp smoked paprika 
  • 1tsp garlic powder 
  • Salt and pepper to taste  

For the topping: 

  • 100g dry breadcrumbs
  • Dried thyme
  • 50g nutritional yeast


  1. Preheat the oven to 200 degrees Celsius  
  1. In a large saucepan melt the vegan butter then whisk in the flour. 
  1. Cook this for a couple minutes then gradually add in the milk until a thick sauce is formed. Turn the heat to low so that it doesn’t boil or burn. 
  1. Stir in the vegan cheese, nutritional yest, mustard, hot sauce and smoked paprika, garlic powder then taste and season with salt and pepper accordingly. 
  1. In a large baking dish, add the macaroni and sauce and stir to combine. 
  1. Sprinkle with breadcrumbs, nutritional yeast and thyme then bake in the oven for 20-25 minutes, until the top is golden brown and crispy. 
  1. Remove from the oven and let it stand for 5 minutes before eating.
